Flavorful Spinach and Feta Stuffed Chicken!

Imagine your next chicken recipe. Did you picture the usual seasoned and pan-fried chicken breast? While those recipes are good, if you’re looking for something different and delicious, we have a recipe this week to elevate your chicken game with this spinach and feta stuffed chicken breast! Made with always juicy and tender Halal chicken and bursting with Mediterranean inspired flavor, this simple recipe is just what you need to make your next chicken dinner a winner.

Jumping right into this recipe, let’s take a look at the stuffing that sets it apart from other chicken recipes. This stuffing is a simple but effective mix of a few herbs, veggies, and spices that is a great blend of flavor and texture that makes this chicken a welcomed change up from other recipes. The feta, green onion, and spinach have a great tangy flavor that isn’t overpowering thanks to the ricotta cheese that adds its own flavor and holds all the ingredients together, making it ideal for stuffing into the chicken breast. If you don’t have a lot of Mediterranean flavors in your diet, then this recipe is a great addition to your kitchen because it’s just enough new flavors that pair so well with the juicy deliciousness of a well-seasoned Halal chicken breast.

And speaking of the chicken itself, we wanted to do our own experimenting with this recipe and try a couple different ways of preparing the chicken for the stuffing. So if you’re only interested in one method, you can divide the proportions of the ingredients listed for this recipe in half so you don’t end up with too much stuffing. The first method we tried was pounding the chicken flat and placing the stuffing in the center, before rolling it all up and tying it all together with butcher’s twine. This made stuffed chicken roll-ups that were more involved to make but still very tasty. The other method was even easier by slicing the breast almost completely in half, butterflying it, before filling it with the stuffing and pressing the two halves closed to seal everything in. Afterwards, we used a simple seasoning blend of a few herbs and spices on both sides of the chicken to complete the flavor and the paprika gives the chicken a great golden-brown color when cooked that always tastes great and looks even better. To get a golden the perfect exterior and a little bit of a crispy crust, the chicken just needs a quick trip to a hot pan for a few minutes on all sides until golden brown before going into the oven to finish cooking completely.
